100% Kona Coffee Light Medium Roast


This is our favorite roast.  The coffee is grown and handcrafted on the Kona True coffee farm.  Our Whole-bean, light-medium roast is a light chocolate brown color with no oil on the surface.  This is how it is roasted for competition, because you can taste the unique characteristics of the farm with this roast.  It is clean, light, fruity, and delicate with no bitterness.   It has more caffeine than our other roasts.  It comes in two sizes.

Roast level:  “Light Medium” also called a “City + Roast” is roasted until the middle of the 1st crack.  This is the roast we recommend when you want to taste what makes Kona coffee special.  This is the roast I drink here on the farm and what we serve our friends and guests, even though before we owned the farm, I only drank dark roast coffee.  At first I drank this roast, so that I could taste all the nuances of the bean without them being hidden by the char of the roast, soon I began to prefer this roast level over all others.

Kona True farm is located on the side of the active volcano Mauna Loa, in the Kona district, on the Big Island of Hawaii, overlooking the Pacific Ocean.  The volcano brings our coffee trees clouds and sweet shade in the afternoon, and the ocean brings the gentle breezes.  Together they create the micro-climate that makes Kona one of the best premium specialty coffees of the world.

Our coffee is truly handcrafted.  We hand pick the coffee cherry at the peak of ripeness.  As the sun sets over the Pacific Ocean, that day’s cherries are washed, sorted, and their pulp removed.  The seed is then left to soak overnight in fresh water.  The next morning the beans are rinsed, and then laid out for drying.  During the drying process, we continue to remove beans that aren’t perfect.  Once dry, the beans are stored in a new burlap bag.  When ordered the paper husks are removed from the dried coffee bean, and beans are sorted again.  Then the coffee is roasted to order in small batches, packaged, and shipped immediately to you.

We do not use poisons, herbicides, or fungicide on our farm.  We only use organic fertilizers and our grass clippings to feed the coffee.  It is more work, and the quantity we can grow is less, but the results are worth it!

There are no GMO plants on our farm.  Our mature trees are old stock Arabica coffee trees known as Kona Typica, and our new trees are grown from their seeds.  There are a variety of fruit, nut, and flowering trees on the farm to provide food and shelter for the birds and lizards who help us by eating bugs.

Our coffee is direct from farmer (us) to consumer (you).  We live here, work here, play here, and drink our coffee.  What is important to us is healthy ecosystems, sustainable methods, and superior coffee.
